You come across it more and more often, but what actually is Pandan? Pandan is seen as the new seasoning, for example by Nigella Lawson (see our previous article). You may know pandan from Asian cuisine such as pandan rice, pandan bacon biscuit or pandan cake, but pandan leaves themselves are also often used in curries or marinades. .

It is a long narrow leaf that comes from the screw palm. Pandan is a tropical plant from Malaysia and Indonesia, which is rarely found in the wild and is therefore mainly cultivated. In these countries, pandan is used almost daily and we see it being used more and more often in Western cuisine!

Pandan has a nutty and subtly sweet taste. It is also called ‘Asian vanilla’ because of its sweet taste and pleasant smell. It also gives off a bright green color, which you can see beautifully in, among other things, the bacon biscuit. To impart flavor and color, the leaves can be boiled and then fished out again. To release the flavor, tie a knot in the leaf to bruise it, or you can also soak it in coconut milk beforehand.

You can use the pandan leaves fresh, dried, as a paste or extract. You can use pandan in many different dishes. You can use it as a seasoning for your rice, but also in your pasta, soup, curries and cakes.
