A one-night celebration of cocktails and cuisine
Recently, the spirit of pandan took centre stage during a special evening at LuminAir Amsterdam. Under the theme “Pandan, the Emerald Green of Asia,” Bandoeng’22 brought together flavour, culture, and craftsmanship in an inspiring two-part event.
Trade Masterclass
The afternoon began with an exclusive masterclass hosted by Marc Pieplenbosch, co-founder of Bandoeng’22. Bartenders and industry professionals were invited to explore pandan’s rich heritage, its deep roots in Asian cuisine, and its growing influence in the world of cocktails. The session offered an insightful journey through flavour, aroma, and cultural storytelling, the essence of Bandoeng’22.
Cocktail & Food Pairing Experience
As the sun set over Amsterdam, the celebration continued with an exclusive food and cocktail pairing at LuminAir. Guest bartender Julian Bayuni (Vesper Bar) joined forces with Chef Gerrie van der Hoest (Restaurant Bowery, Hilton Schiphol) to present a menu inspired by pandan’s delicate and layered character.
Julian created two signature cocktails to complement Chef Gerrie’s bites:
Cool as a Coconut, paired with a bao filled with rendang and softshell crab.
Jamule, a vibrant, zingy mix of Bandoeng’22, Bobby’s Gin, and Good Jamu soda, paired with a fish dumpling in peanut sauce.
To conclude the evening, Alejandro, bar manager at LuminAir, presented a third cocktail, a sweet creation paired with an Indonesian-style dessert, also from Chef Gerrie. More about Alejandro and his pandan-inspired serve will follow in an upcoming newsletter.

Menu of colours
Every month, LuminAir rooftop bar Hilton Double Tree, Amsterdam highlights a single colour as the inspiration for its cocktail menu. For October, the theme was green, and Bandoeng’22 Pandan Liqueur, with its signature emerald hue, was selected as the spirit of the month.
The Menu of Colours is the expression of LuminAir’s bold approach to mixology, where innovation, flavour, and artistic vision converge. Each signature cocktail draws inspiration from the captivating phenomenon of light refraction.
