The Dutch Colada cocktail

Signature cocktail from bartender Daryl Lieuw-On.

Our friend Daryl (from The Rumah, Rotterdam) has developed a number of cocktails especially for us. Among other things, his variant on a Pina Colada cocktail. A Pina Colada is a sweet cocktail made with rum, coconut milk and pineapple juice. Usually made in a blender or in a shaker with lots of ice. Daryl’s variation on this classic cocktail is the use of fresh organic buttermilk (!) from Dutch cows. To give the whole thing a tropical tint, Daryl used Pandan Liqueur.

Ingredients
40ml (1.35 fl oz) Bandoeng’22
30ml (1.01 fl oz) Rum (white dry rum)
50ml (1.70 fl oz) Buttermilk
10ml (0.34 fl oz) simple syrup
Garnish with pandan leaf and dried lemon wheel (optional)

Method of preparation
Fill a tall cocktail glass with enough ice. Pour the pandan liqueur, Rum, buttermilk and syrup into a mixing cup. Add plenty of ice. Close the mixing cup and shake for at least 30 seconds. Pour the cocktail into the tall cocktail glass using a strainer. Garnish the drink with a pandan leaf and a slice of dried lemon (optional)
