Pandan Daiquiri – Pandan Liqueur Cocktail by Simon Thai
The Pandan Daiquiri is a tropical twist on the classic Daiquiri cocktail, created by bartender Simon Thai. By combining fresh lime juice and rum with the aromatic flavour of pandan, this cocktail brings a Southeast Asian dimension to a timeless drink.
Made with Bandoeng’22 pandan liqueur, the cocktail develops a vibrant emerald-green colour and a smooth tropical aroma. Pandan is often described as the “vanilla of Asia”, known for its warm notes of vanilla, coconut and toasted nuts.
The Pandan Daiquiri shows how pandan liqueur can elevate a classic cocktail recipe with an exotic yet balanced flavour profile.
Pandan Daiquiri from Perth
From the shores of Australia comes a fresh pandan twist on a true classic. Created by Simon Thai, bartender, bar owner, and all-round flavour enthusiast. This floral, sweet, and tart daiquiri is one of the signature-serves at his Hygge Bar in Perth.
Our importer and distributor Siegfrid Bacani from 7000 Islands Drinks introduced us to Simon, and it wasn’t long before we found common ground: a love for pandan, cocktails, and creating something unpretentiously delicious.
“Nothing too crazy,” Simon says. “I really like pandan-flavoured things, and I like drinking daiquiris.” A simple starting point. A beautiful result.
The Pandan Daiquiri, this is a drink that pairs effortlessly with the bold flavours of Hygge Bar’s food menu, easy to love, easy to serve, and one for your own cocktail list.

Why bartenders use pandan liqueur in cocktails
Bartenders around the world are increasingly experimenting with pandan liqueur because of its unique flavour and colour. The aromatic pandan leaf adds tropical notes similar to vanilla and coconut, while its natural green colour creates visually striking cocktails.
Bandoeng’22 pandan liqueur was developed specifically to bring these Southeast Asian flavours into modern cocktail culture.
