The Paulmaretto Sour is a refreshing pandan liqueur cocktail created by bartenders Paul van Os and Egon Robbe at Ron Gastrobar Indonesia in Laren, the Netherlands. Inspired by tropical flavours and classic sour cocktails, this drink combines the aromatic sweetness of pandan with the nutty character of amaretto.

Made with Bandoeng’22 pandan liqueur, the cocktail develops a vibrant tropical aroma and a subtle emerald-green character. Pandan is often described as the “vanilla of Asia”, bringing warm notes of vanilla, coconut and toasted nuts.

Balanced with fresh lime juice and egg white, the Paulmaretto Sour is a smooth and elegant cocktail that pairs beautifully with Indonesian dishes and a traditional rice table.

What is a Sour cocktail?

A Sour cocktail is a classic cocktail style that combines a spirit with citrus juice and sweetness to create a balanced drink. Famous examples include the Whiskey Sour and Amaretto Sour. In the Paulmaretto Sour, pandan liqueur adds a tropical twist to the traditional sour cocktail structure.

Paulmaretto Sour – Pandan Cocktail Recipe

Paul & Egon have graciously shared their signature recipe so you can recreate this delicious cocktail at your venue.

Ingredients
30 ml (1 oz) Bandoeng’22 Pandan liqueur
30 ml (1 oz) Amaretto
40 ml (1.35 oz) Lime juice
1 egg white
10 ml (0.35 oz) Simple syrup (optional for a sweeter touch)

Preparation
1. Fill a tumbler glass with crushed ice.
2. Add all ingredients to a shaker and dry shake (without ice).
3. Add ice to the shaker and shake again (cold shake).
4. Empty the tumbler and refill it with fresh ice cubes.
5. Double strain into the glass.
6. Garnish with a dried lime wheel and a few dashes of Angostura bitters over the foam.

After the success of Ron Gastrobar Indonesia Ouderkerk aan de Amstel, renowned chef Ron Blaauw launched his second Indonesian restaurant in 2020, featuring authentic dishes with a modern twist by chef Agus Hermawan—perfectly complemented by Paul and Egon’s signature cocktails.

Paul van Os
Paul stepped behind the bar in 2023 and, since 2024, has taken full charge of the bar operations. While hospitality is his true passion, he finds joy in crafting stunning drinks that create wow moments for guests. He thrives on experimentation, always pushing boundaries with new and unexpected ingredients. His philosophy? If we have it in-house, we can make it.

Egon has been a bartender at Ron Gastrobar Indonesia Laren since August 2023, starting as an intern while studying hotel management. The bar quickly became his favorite place to be, and he has loved it ever since.
